Research content

The Food Functional Chemistry laboratory conducts research on the establishment of analysis methods, clarification of the oxidation mechanism, in vivo functions, mechanisms of metabolism, etc., of fats and oils. Details of our research are described below:

1.Establishment of analysis methods for fats and oils
  • •- Development of a new analysis method for triacylglycerol (TAG) isomers
  • •- Quantitative analysis of all TAG isomers contained in fish oil TG
  • •- Development of new quantification methods for lipids
2.Clarification of the oxidation mechanism of fats and oils
  • •- Clarification of the oxidation mechanism of highly polyunsaturated fatty acids
  • •- Research on the oxidation of TAG positional isomers
  • •- Research on the oxidation and toxicity of fats and oils
3.Mechanisms of fat and oil metabolism
